The Bersan family has been established in St-Bris for numerous generations. Father and sons work together using the same knowledge and tradition. Today, Jean-Christophe takes care of the winemaking. The village of Saint-Bris-Le-Vineux features a great network of interlinked cellars, build by templar monks and villagers during the 11th and 12th century. They allowed safe travell in case of a siege for example. Nowadays, every dwelling in the village has one of those cellars. The cellar in the Bersan property is used to aged barrels or demi-muids in near-perfect conditions. The domaine’s production makes up for about two thirds white and one third red and rosé. The vineyards spread over a surface of 22ha and is in organic conversion since 2009. Jean-Christophe takes a natural approach of winemaking, avoiding filtration and excessive SO2. Vineyard: multiple parcels spread out on the coteaux Kimmeridgiens, 10-45 years old vines
Grape variety: 100% pinot noir
Terroir: soil dates to the Kimmmeridgian, limestone made out of dead shells.
Winemaking: low yields of 25 hl/h, fermented in temperature controlled stainless-steel. Aged 10 months in french oak “demi-muids”
