It originated as a side project by Jules Chauvet’s pupils Marcel Lapierre and Joseph Chamonard, They purchased a 13ha parcel planted in 1914, outside of the cru status but that showed great potential. It is planted on argile-granite and calcareous-sand. Since Marcel’s death Marie Lapierre now vinifies the Chateau Cambon cuvée while Jean-Claude Chanudet took over the “Cuvée du Chat”.

Grape variety: 100% Gamay
Terroir: Argile-granite and calcareous-sand
Winemaking: hand harvested, whole bunch carbonic maceration with temperature control in enamel tanks. The wine is moved to Foudre to rest on lees, bottled with little to no S02.
This is a natural wine without added yeasts and with very little, or no added sulphites. This leads to wines with great purity of fruit but might also lead to more outspoken aromas. Beware that this style might be different from what you are used to when drinking conventional wines.
