This is a natural wine without added yeasts and with very little, or no added sulphites. This leads to wines with great purity of fruit but might also lead to more outspoken aromas. Beware that this style might be different from what you are used to when drinking conventional wines.

Domaine Valette – Mâconnais Family domaine since three generations situated in Chaintré, at the border of the Beaujolais. The Valette family runs 15ha organically since 1992 and the only grape variety is chardonnay. They pay special attention to life in their vineyard at a micro-level, ploughing or pushing the growth of weeds depending on the geography and geology of the parcel. The winter pruning is done more tightly to achieve higher sugar levels. This also has to do with the fact that vineyards around Chaintré are warmer so they opt for maximum maturity and a super ripe style. Hand harvested in late september, pressed mecanicaly or with a pneumatic press at low pressure, it is left untouched. It ferments one year in a cuve and is transfered for a year of aging in used oak barrels along with its lees. Before the following harvest the wine is racked and aged at least a further year. Wine is then bottled unfiltered and unfined. A.O.C. Mâcon-Chaintré 2015 Vineyard : Chaintré, 10 km south of Mâcon, 65 year old vines on a parcel of 4ha. Grape variety: 100% Chardonnay Terroir: Ploughed clay, silt and silica soils, they also push grass seeding. Winemaking: Early September manual harvest, whole bunch is pressed. No additives during winemaking, it is aged for 32 months on fines lees in vats (20%) and in oak barrels (80%). Can keep up to 8 years
